Vegetable Upma is easy to prepare.
Roasted Rawa (semolina) and different vegetables are the key
indegrents.
Upma can be made with out vegetables also , but to increase its
nutrients level we can have with vegetables .
Vegetable upma can be called as Healthier version .
The thing about upma i love is its softness that melts in mouth
immediately.
Vegetable Upma recipe given below :
Ingredients :-
Rawa 1 cup
Oil - 3 tbsp
Urad dal - ½ tsp
Channa dal – ½ tsp
Cumin seeds – ½ tsp
Mustard – ½ tsp
Carrot -1
Green beans- 6-7
Onion -1
Curry leaves 8-10
Green chili 4-5
fresh peas -1 tbsp
small Capsicum 1
Ginger 1/4 tsp (chopped)
Water -2 cups
Salt -to taste
Lemon juice- to taste
Garnishing: coriander leaves
Cashew 6-7
Procedure :-

Chop the vegetables and green chillies
separately.
Keep aside.
·
Roast the rava without
any oil until the rava becomes light brown or until you smell the aroma.
Keep
the rava aside.
·
Heat oil .
·
Add mustard seeds.
·
Add channa dal, urad
dal and cumin seeds when mustard seeds begin to splutter.
Fry
till dals turn golden-brown.
·
Add chopped green
chillies, curry leaves, and chopped onions. Keep frying for 1
minute.
Increase the flame to medium.
·
Add chopped green
beans, carrot, potato and capsicum one after the other with a gap of 1 minute
for each.
Keep frying for 3-4 minutes.
·
Add chopped tomato and
ginger and a pinch of salt.
Fry for 1 minute.
·
Add boiling water and
cook till the vegetables are fully cooked.
·
Add salt and cook
till the vegetables have absorbed the salt.
·
Add roasted rava
slowly when the water is boiling and stir continuously.
After you
add all the rava, mix it with the vegetable seasoning thoroughly.
·
Turn the flame to sim.
Wait for 3-4 minutes.
·
Cook for two more
minutes.
Switch off the stove.
Add lemon juice.
·
Wait for another 4-5
minutes.
Your vegetable upma is ready!
Garnish with chopped coriander
leaves.
Enjoy this in your breakfast with Juice.....
